creamy avocado and kiwi

Ever since I got my high powered fancy pants blender (aka the new love of my life), my breakfast smoothies have been better than ever and I've been feeling inspired to get more creative with them.  I've made a few discoveries so far - broccoli in smoothies? delicious.  fennel?  amazing. - and wanted a better way to keep track of my successes and failures.  So welcome to my morning smoothie.



Today's smoothie:
1/4 avocado
1/2 lemon
1 kiwi, peeled
1/2 frozen banana
1/2 tbsp chia seeds, soaked in water
3/4 cup almond milk
1/2" slice ginger
5 frozen strawberries
2 cups spinach
3 leaves beet greens
1.5 tsps lecithin

made about 32oz









Outcome:
Delicious!  The lecithin, avocado, and almond milk created a thick and creamy smoothie with the consistency and feel of a milkshake.  The lemon and ginger added just enough brightness without being overwhelming and all the fruit flavors blended together nicely.  One of my tastier smoothies.

Next time I may add the chia after the smoothie's blended because the ground chia was surprisingly irritating on the back of the throat.
